Lemon Cake – Babeta
This Babeta Lemon Cake combines the freshness of lemon with a soft, velvety texture that melts in your mouth. Each bite delivers the perfect balance of sweet and tart, making it ideal for spring gatherings, afternoon tea, or whenever you need a touch of brightness in your day.
9 or 10 inch baking pan
Serves: 8
Prep: 40 minutes
Bake: 300F (150C) 45-50 minutes
Total: 1 hour 30 minutes
Ingredients:
2 cups all purpose flour (300g)
2 cups powdered sugar (320g) plus more for dusting the cake
4 eggs
1/2 cup (120ml) oil
1/2 cup (120ml) water
2 tsp baking powder
1 lemon for zest
1/3 cup (75g) lemon juice
Melter butter and flour for the pan
Directions:
- Butter up a cake form and add flour, covering whole form. Wondra flour works better since it is more coarse. Set the form aside.
- Into a medium sized bowl add 2 cups all purpose flour, 2 tsp baking powder and zest from one lemon. With wooden spoon mix together and set aside.
- Into a large bowl add 4 egg yolks, 2 cups powdered sugar and 1/2 cup water. Mix until bubbly.
- Add into the large bowl the content of the medium sized bowl.
- Add 1/2 cup oil and 1/3 cup lemon juice. Mix it all together until it is well combined and set aside.
- Preheat oven to 300F.
- Mix 4 egg whites until soft peaks form. Gently fold the egg whites into the batter. Pour into set aside cake form.
- Bake at 300F for about 50 minutes or until wooden skewer comes out clean.
At my conventional oven it takes 50 minutes but every oven bakes differently. It could take longer on such low heat if it is gas oven. - As soon you pull it out of the oven generously sprinkle powdered sugar all over the cake.

Can I reduce the amount of powder sugar?
Yes you can.
I don’t have a “spring” pan. What other baking pan/dish can be used?
Any other baking dish, that isn’t as big will work. Also bundt cake form.
My son chose to the study Czech Republic for grade school social studies. One of their end projects was to bake something from the region(making learning fun!) to share with the class. He picked this one and we made it together. Delicious!! We will definitely make it again. Thank you for sharing!

Can you use orange instead?
It will be definitely sweeter, but should work.
Hello this cake has an amazing taste and texture for the most part. However, I am cooking with
gas fan oven therefore according to the advice I read online (another site) is that I should reduce the temperature of the oven from 150 degree to 130 degrees. However, I found that my cake needed much longer cooking time and it still wasn’t done perfectly on the centre. I check with a pin and it was done and removed it and found later a slight band where it hadn’t cooked fully. Which type of oven were you using?
I don’t use the fan, just regular heating up and down. Yes 130 is way too little. Would need more time to cook properly. I noticed in CZ in the same style oven, but smaller it took longer than in USA. So it is about testing out your oven and how fast it bakes.
Will you send me this cake ? No so I will make it, looks I will make it. Looks delicious, I am from Czech now and my G ma and ma cooked this a lot, Christmas is coming, so more cooking :)
