Egg White Sweet Bread – Bílkový chlebíček
A soft and airy sweet bread made with egg whites with raisins, chocolate and walnuts. It is lightly sweetened and perfect with coffee or tea.

Ingredients:
6 (7.25oz, 205g) egg whites
3/4 cup (105g) all purpose flour
2 tsp baking powder
1 1/4 cups (150g) powdered sugar
2 TBSP (25ml) rum / water
2 TBSP (25ml) oil
1/3 cup (50g) raisins
1/2 cup (50g) walnuts
1/3 cup (2.3oz, 65g) chocolate chips or chocolate, chopped
Softened unsalted butter and flour, preferably Wondra flour for the pan.
Directions:
- Into a medium sized bowl sift together 3/4 cup all purpose flour and 2 teaspoons baking powder.
- chop 1/2 cup walnuts into smaller pieces and add to a bowl, into the same bowl add 1/3 cup chocolate chips and 1/3 cup raisins. Set aside.
- Butter up the whole loaf pan with softened unsalted butter and sprinkle Wondra flour inside the pan. Make sure to cover every part. Set is aside
- Preheat the oven to 350°F.
- Into a stand mixer bowl add 6 egg whites. Use whisk attachment. Mix it on the highest speed until it starts to get more firm, but still runny.
- Add 1 1/4 cups powdered sugar and mix first on slow to mix the sugar in. Slowly increase the speed to medium high. Mix until you see soft peeks. (You don’t want to have it extremely firm, because it is harder to mix everything together.)
- Add sifted flour and baking powder, add 2 tablespoon of rum and 2 tablespoon of oil. Mix it on the slowest speed until it gets all combined. It doesn’t take long. Less mixing time is better. (You want to keep the egg whites airy and not deflated.)
- Gently add mix of walnuts, chocolate chips and raisins and mix on the slowest speed just to give it a stir. Takes 5 seconds.
- Gently mix everything one more time with spatula. (Ingredients might be stuck on the side or bottom of the bowl.)
- With the help of the spatula gently transfer the mixture into prepared loaf pan. Make sure the top is nicely leveled.
- Bake in preheated oven until cake has nice darker color and a skewer comes out clean. (It might have some chocolate on the skewer, but make sure there is no dough stuck to it.)
- Bake the cake for approximately 28 minutes.
- Let the cake rest in the pan for about 5 minutes and then carefully put it on a cooling rack.
