Egg Omelette – Vaječná omeleta

This Czech style omelette is simple, fast and very filling. Growing up we would have this meal pretty often since it didn’t cost much money to make.
Tips:
- You can substitute ham for hot dog or sausage.
- I like to use measuring container to put the egg mixture in to see how much it is in total. I divide it by half and pour the half to the frying pan. It is easier to measure how much is one omelette. Total depends on the size of the eggs you are using.

Ingredients:
3 eggs
1/4 tsp salt
1/2 cup (120ml) milk
1/3 cup (50g) all purpose flour
3 oz (85g) thinly sliced ham
Oil for frying (1 1/2 tsp per omelette)
Directions:
- Cut 3 oz thinly sliced ham into smaller pieces. Set aside.
- Crack 3 eggs into a bowl, add 1/4 tsp salt, 1/2 cup milk and 1/3 cup all purpose flour. Whisk everything together trying to break any flour chunks. (You can use hand mixer.) Mix until the egg mixture is all smooth.
- Add cut ham and mix together.
- Add 1 1/2 tsp oil into a frying pan. Pick up the pan and try to move the oil over the pan. Turn the heat to medium and wait for the pan to get hot.
- Pour half of the egg mixture into the frying pan, spreading the ham with spatula more evenly. Cook until the bottom has a nice color and omelette is moving when you shake the pan and there is no runny egg on top.
- Using a spatula carefully flip the omelette to the other side. Keep an eye on it since this time it is done faster.
- Fold it into a half and transfer the omelette to a plate.
- Add 1 1/2 tsp to the frying pan and repeat the process for the second omelette. (Pan is now hotter so it will cook faster.)
- Pair with Crushed potatoes and garnish with chopped parsley and vegetables.
