Blueberry Bundt Cake – Borůvková bábovka
A tender, golden bundt cake filled with fresh blueberries and a hint of lemon — this recipe brings a taste of sunshine to any table.

Prep: 30 minutes
Bake: 350°F (180°C) for about 55 minutes
Total time: 1 hour 25 minutes
Ingredients:
2 cups (280g) all purpose flour
1 cup (200g) granulated sugar
2 tsp baking powder
1 lemon for zest
2 eggs
1/2 cup (120ml) oil
1 cup (240ml) milk
1 tsp vanilla extract
1 1/2 cups (9 oz, 255g) blueberries
Unsalted butter and flour, preferably Wondra flour for the bundt pan.
Powdered sugar for dusting
Directions:
- Cut about 1/2 Tbsp unsalted softened butter and cover the inside of the bundt pan including the center and tops. Do it very thoroughly so bundt cake can easily come out.
Add flour inside the pan, spread around to cover every piece of the pan. If you see spots with no butter, add more butter and then flour. If there is extra flour, put it back into your container. Set the pan aside. - Preheat the oven to 350F.
- Into a medium sized bowl sift 2 cups all purpose flour.
- Add 1 cup granulated sugar, 2 tsp baking powder and zest from 1 lemon. Mix together.
- Add 2 eggs, 1/2 cup oil, 1 cup milk and 1 tsp vanilla extract.
- With the help of the whisk, whisk everything together, breaking any clumps. Mix until it is smooth consistency.
- You will use the batter in 3 layers and 2 layers of blueberries.
- Into the prepared bundt cake pan add first part of the batter. Add 3/4 cup of blueberries, add second part of the batter, last part of blueberries and last part of batter. (You might have some blueberries on the top, which is fine.)
- Bake it at 350°F for about 55 minutes. (You might be using not as tall pan or your oven might need less time, so test it with wooden skewer. If no cake sticks to the skewer, the cake is finished.)
- Set the baked cake on the stove and let it rest for about 2-3 minutes.
- Remove the cake from the pan. Flip it carefully unto a plate or wooden board. (The pan is still very hot so use oven mitts.)
- Let the cake cool off before adding powdered sugar.
