Halusky / Potato Gnocchi – Halušky
This dish is traditional Slovak dish, but it became favorite in many Czech families.

Ingredients:
2 lbs (900g) gold potatoes
1 tsp salt
1 1/4 cups (175g) all purpose flour
10.5 oz (300g) feta cheese or traditional brynza cheese
1 cup (8 oz/0.5 lb/230g) sour cream
1 lb (450g) bacon
optional chopped fresh parsley or chives for the topping
Directions:
- Add 1 lb bacon strips to a frying pan and turn the stove to medium low heat. Turn the bacon to the other side when one side has desired crispiness and color.
- While the bacon is cooking peel 2 lbs of potatoes, wash them and set them aside.
- Add the finished bacon on the plate lined with paper towel to soak up the extra fat. Let the bacon cool off.
- If the feta cheese is in the brine, drain the liquid. Into a medium sized bowl grate 10.5 oz of feta cheese and add 1 cup of sour cream. Mix it all together.
- When the bacon is cooled off, cut it into smaller pieces and add into a small bowl.
- Into a large pot add hot water and about 4 pinches of salt. Use preferably tall pot. Put the lid on top partly opened and bring the water to a boil.
- Cut the potatoes little bit so they can nicely fit in a food processor. If you don’t have a food processor use a grater with smallest openings and grate all the potatoes. If using a food processor add all the cut potatoes into a processor and grate them very finely. Scoop up the grated potatoes into a larger bowl. If potatoes have lots of liquid you will want to strain it. I use small strainer, which I press into a grated potatoes and with spoon I scoop up the liquid inside the small strainer.
- Into the potatoes add 1 tsp salt and 1 1/4 cups all purpose flour. Mix it all together.
- Prepare large bowl with the lid for finished halusky.
- When the water is boiling lower the heat little bit, but not too much since you will loose some heat when you add halusky in.
- Set the halusky maker on the top of the pot. It should sit nicely, but make sure it isn’t touching the water.
- Scoop up half of the potato mixture unto the halusky maker and with use of a scrapper spread it over the holes moving the scrapper around. Halusky should be falling nicely inside to the boiling water. Make sure the water is boiling the whole time. Don’t use the lid. (If you don’t have halusky maker, add some potato mixture unto a wooden board and with little spoon form small halusky and drop them into the boiling water.)
- When you add half of the potato mixture, gently stir the pot making sure nothing is stuck to the bottom.
- Boil halusky for 8 minutes. After they are done, scoop them up with a tool with openings for extra water to go through it. Transfer the cooked halusky into the large pot and cover them with the lid.
- Continue the same process for the remaining potato mixture.
- After all halusky are cooked add feta cheese and sour cream mixture.
- Combine everything very well.
- Put halusky on the plate and top with chopped bacon peaces and chopped parsley or chives.

netuším, jestli se ve vašem kraji prodávají tavené sýry. Pokud ano, zkuste halušky promíchat se smetanovým taveňákem. . A co je ještě moc dobré, zkuste do té slaniny, když se opéká přidat lžičku másla. Ono to chytne takovou tu máslovou vůni, jako když se rozpouští máslo . Bude tím vonět celý dům :-D
